The secret is to use the position() function to test whether the
particular item you're looking at is the last in the list or not. If
it isn't, then you want to add the " | "; if it is, you don't. So use:

  <xsl:for-each select="list/item">
    <xsl:value-of select="." />
    <xsl:if test="position() != last()"> | </xsl:if>
  </xsl:for-each>

In XSLT 2.0, use my personal favourite cute feature:

  <xsl:value-of select="list/item" separator=" | " />
