You can't-the result tree doesn't contain XML character references, just text nodes. You can ask XSLT engine to serialize the result tree using an encoding that cannot represent the character LATIN CAPITAL LETTER C WITH CEDILLA and the character will be output as a character reference; ASCII in this case, if your engine support it.
