going via FO (which is desgined really for typeset output)  seems a
strange choice for generating plan text. Why not just generate the text
directly from XSLT?

If you want any help you are going to have to give people some hint of
the input and the stylesheet.

  This solves most of the issues with text ouput like
  formatting and overlapping lines etc but there are
  still extra spaces between words.


the spaces will either have come from your input file or from your
stylesheet but you have given no indication about the structure of
either of these.
