you don't want to process the p, but it's text children so

<xsl:template match="p/text()">
	<xsl:value-of select="substring-before(., 'body')"/>
	<xsl:value-of select="'replace_body'"/>
	<xsl:value-of select="substring-after(., 'body')"/>
</xsl:template>
