utf-8 is (in the range for European non-ascii characters) a two byte encoding, so nbsp and accented characters come get encoded as two bytes. If you then look at the file with an editor that thinks the encoding is latin-1 or ascii then all non ascii characters get scrambled, typically involving accented capital A.

there is nothing wrong with the file, just the way the software you are using to view the file is configured.
