Circa 1981 or so, WayOut from Sirius Software did a spectacular job of
full 360 degree, 3D projection.  No projected enemies, IIRC, just a maze.
But it was beautiful to watch/play.  Apple II, 48K required.  Frame rate
was good.  Solid colored walls, not wire-frame.
