Even the O^2 must have a formal gfx chip of some kind. The Colecovision, though, I think used a TI chip similar to the one in the TI99/4A and MSX computers. Same with the NES 8-bit. As for sound, the Vec and Astrocade, I believe, used the same stock 3-voice sound chip.
