The data for COKE is at $FB96 (CO) and $FBA0 (KE).

The PEPSI letters and the invader are stored at $FC28, $FC3C, $FC50, 
$FC64, FC78 and $FC8C. There are two copies of each, representing
the two states of movement. Each copy is 10 bytes large and stored
from the last row upwards.

If you want to change anything else, like the Pepsi UFO, you
should get the PCAE emulator for it's debugger and Distella
from Bob Colbert's homepage to disassemble the BIN file.
With these two tools and a lot of time it should be easy to
find anything you are looking for.
