You need to have "Multilanguage Support" enabled in Windows (or, I believe, a Unicode font) so the characters Jade is outputting are displayed correctly. On the "Windows Setup" tab in the "Add/Remove Programs" control panel, either select the "Multilanguage Support" item or open the item and select "Greek Language Support". This will install additional Greek fonts for the common Windows fonts, e.g. Arial, Courier New, etc. If you want to use Greek with some other font (e.g. I recently had some Greek in a document set in Sabon), you're on your own.
