This will get you all the text that is inside the
plant element and its children I guess.

Instead do the following
<xsl:template match="plant">
  <tr><td><xsl:apply-templates/>td></tr>
</xsl:template>

<xsl:template match="type">
</xsl:template>

<xsl:template match="height">
</xsl:template>
