Changing something while preserving the rest is done using identity 
transformation:

<xsl:template match="@*|node()">
  <xsl:copy>
    <xsl:apply-templates select="@*|node()"/>
  </xsl:copy>
</xsl:template>

<xsl:template select="output">
  <!-- Omit me -->
  <xsl:apply-templates select="node()"/>
</xsl:template>
