I never use attribute sets at all, they just seem a dull restricted
version of a variable.
Here you can use (at the top level)
<x:renderx
  a="1"
  b="2"
  c="3"
/>
<x:xep
  a="3"
  c="4"
  d="5"
/>
and then 
<fo:whatever>
<xsl:copy-of select="document('')/*/x:*[local-name()=$product]/@*"/>
will add the desired attributes to an element in the result tree.
As always you can use a node-set extension and real variables
to avoid the document('') nonsense, if you prefer.
