<xsl:output method="text" version="1.0" encoding="theEncoding" ^^^^^^^^^^^
if that is iso-8869-1 then it should work, shouldn't it?
indent="yes" omit-xml-declaration="yes"/> ^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^
these two are not needed (and don't do anything) in text output
