Dan, IE does not always concatenate "adjacent text nodes", which is an error. I have eacute's elsewhere in the file and they are being translated fine. But when the rule is <xsl:value-of select="text()"/> IE is not interpreting the entity as text. However if that is the case you usually get an error from the XML parse saying the file could not be found...
