[xsl] Replace function and apostrophes

I'm trying to replace all occurances of apostrophes with \' as part of a
variable's select statement:

<xsl:variable name="foo" select="replace(., '&apos;', '\\&apos;'"/>

This fails with "invalid character in expression '\'" - any ideas on how
to do this?
