Great question and also touching on my area of expertise. There are basically two types of XML authoring/editing tools - desktop or web-based. For desktop tools there are many choices but Oxygen really is the most mature commercial application these days. Arbortext is robust and flexible but somewhat difficult to train and support users. For web-based tools I would suggest Fonto and Xeditor as the most mature applications. They also bring a lower training/support burden. Perhaps of interest are also the tools that work with MS Word. They allow you to use Word as an XML editor. There are a few approaches to how this is handled but Quark XML Author and Ictect are two that spring to mind as mature solutions. They are in the form of plugins for desktop Word (not online Word). BTW, I believe most offshore copy editors work up the manuscripts in Word. In all cases some degree of configuration and/or customisation of the editing tool is usually required to suit the publisher's workflows and individual usage and adoption of JATS.
