<xsl:apply-templates select="@* | * ">

the * only selects elements, you want * | text() or node().
then you will pick up text nodes as well.

Note you are sorting teh attribute nodes based on their name but this
may or may not have any effect on the way the document is output.
the system may output attributes in any order.
