There is no backslash escaping in XML/XPath. Try <xsl:variable name="name1"> <xsl:value-of select="substring-after ($definition, '"')"/> </xsl:variable>
BTW you could write this as <xsl:variable name="name1" select="substring-after($definition, '"')"/>
