IIRC Bradfort said, that the checksum is calculated over the 2nd kb in the BIN file. In small demo programs every byte has the same value there. If you take a HEX-editor and change some value in the 2nd kb you can probably get the program to work with MacStella. I just tried it with BEU05 and Stella for DOS and it worked.
