Someone should try running the demo on a 25 year old TV and see if it works. It works on my Sharp TV which is circa 1996.

They must have know about this, as it is one of the fundamentals of video.
Although they were dealing with televisions designed and build over 20 years
ago.  The televisions then may have been more sensitive to the half HSYNC
pulses that are supposed to be generated before each field (as well as
generating a half-line).  As far as I can tell the 2600 cannot generate half
HSYNCs, so we can never generate a fully compliant interlace signal.
