The single transistors you are seeing are called transmission gates.  They
pass the signal when the gate signal is high, and latch it when low.
(Assuming a high input impedence.)

Hmm, maybe that's what the asterix means - high input impedence to preserve
the latch.  And the inverter probably should have the asterix.
